asked the Minister for Health the number of inspections carried out in respect of the level of hygiene and cleanliness observed by butcher and fishmonger shops in the past year; the number found deficient in standard; the number of convictions which resulted; and if he is satisfied with the observance of standards.

According to returns which my Department have received from health boards, a total of 15,417 inspections (including follow-up inspections) of butchers, pork butchers, fishmongers and poulterers were carried out by health boards in 1981 under the food hygiene regulations. A total of seven prosecutions were brought in 1981 for offences under the regulations in respect of these premises.

There has been a steady improvement in the observance of standards in these premises and I am satisfied with the arrangements for ensuring a continued improvement in this regard.
