Ceisteanna—Questions. Oral Answers. - Removal of Cream Ban.

asked the Minister for Agriculture if he will state the reasons why, in face of the great scarcity of butter and the danger of a greater scarcity next winter, he has removed the ban on the use of cream for purposes other than the production of butter.

The temporary prohibition of the use of cream for purposes other than the making of butter was primarily intended to assist the maintenance of the domestic milk supply in Dublin and other large centres of population during the early months of the year when production is at its lowest. A considerable quantity of cream is derived from milk produced in non-creamery districts which could not be availed of to supplement the butter ration which is confined to creamery butter. The sale of cream affords a valuable outlet for surplus milk produced during the summer months in the Dublin milk production district. Moreover, the amount of cream sold by creameries if converted into butter is too small materially to affect the creamery butter supply position.
