All creameries are required by law to calculate the price they pay for milk on the basis of the percentage of butter-fat contained in it. When informing their milk suppliers of the results of the calculation, some creameries choose to express it in terms of a price per pound of butter-fat contained in the milk, while others express it as a price per gallon of milk of a stated butter-fat content. This is a matter of individual choice but the basic method of calculation is similar in all cases.
