Vol. 108 No. 2

Ceisteanna—Questions. Oral Answers. - Sale of Dyed Herrings.

asked the Minister for Agriculture if he is aware that dyed herrings are being sold as kippered; and whether, as the dye used is injurious to health, he will have arrangements made to prohibit this practice.

If the Deputy suggests that fish which have been merely dyed or coloured, but not smoked, are being sold as kippered herrings, I can only say I have no knowledge of such a fraudulent practice, and shall be glad to have information as to where it is alleged to obtain.

I understand that the accepted method of kippering herrings, both here and in Britain, includes the use of certain harmless colouring material prior to smoking.
