Ceisteanna—Questions. Oral Answers. - Sale of Freshly-Baked Bread.

asked the Minister for Supplies if he is aware (1) that the sale in Dublin of hot bread is both very wasteful and injurious to the health of the consumers; (2) that the sale of cold bread has been in operation in Cork since it was introduced during the war of 1914-18 and still gives general satisfaction; and (3) that the Department of Defence insists that all bread supplied to the Army must be delivered not earlier than 24 hours after baking; and if he will take steps to ensure that bread sold in Dublin shall have been baked a minimum number of hours previously.

I have had different views conveyed to me from time to time as to the relative-merits of "hot" and "cold" bread and of the keeping qualities of both, especially since the introduction of the 100 per cent. flour. The suggestion that bread should not be sold until it has been baked for a minimum number of hours has already received consideration on a number of occasions but, so far, technical difficulties present themselves in Dublin. The matter is, however, being further investigated.
