Mr. Lemass

asked the Minister for Industry and Commerce if he is satisfied that there is a method of differentiating between flour of 80 per cent. extraction and flour of lower extractions, which may be accepted in a court of law as completely realiable, and, if so, if he will state, in general terms, what this method is.

I am satisfied that if, for the purpose of enforcing the Flour and Bread Order, 1955, it should become necessary to do so, it will be possible to differentiate between flours of 80 per cent, and 72 per cent. extraction.

It would obivously be undesirable to disclose in advance the method or methods proposed to be adopted to establish the difference between flours of different extraction rates, and I am unable to forecast the extent to which a court of law might regard as acceptable or conclusive the evidence produced in support of the prosecution in a particular case.
