Ceisteanna—Questions. Oral Answers. - Use of Bleacher in Flour Milling.

asked the Minister for Health whether a bleacher is used in the process of milling flour for human consumption, and, if so, if he will state the name of such bleacher and the approximate quantity used per sack.

I am advised that bleachers are normally used in the process of milling flour for human consumption but details of the kinds and quantities used are not available in my Department.

A scientific committee which was set up to consider the use of improvers and bleachers in the production of flour and bread reported in 1955 and recommended that the use of agene as an improver and bleacher should be discontinued. By agreement between the milling and bakery industries and the Departments of Industry and Commerce and Health, the use of agene ceased as from 28th September, 1957. The committee also considered the effects of certain other bleachers and advised that, used in the concentrations required for flour bleaching, these agents are devoid of any harmful properties.
