Ceisteanna—Questions. Oral Answers. - Cream for Confectionery.

asked the Minister for Agriculture if he is aware that considerable amounts of cream are used in the making of fancy confectionery, and also served in hotels and restaurants as portions of meals; if he will be prepared to curtail such uses until the supply is sufficient to meet the more urgent demands for cream; and if he will direct the utilisation of the cream so saved to enable an increased butter ration to be made available.

I am aware that cream is used for the purpose stated, but the quantity so used is such that its conversion into butter would not materially affect the butter supply position. I do not propose to impose restrictions on the use of cream at present, especially as a considerable proportion of the quantity sold during the summer comes from non-creamery districts and could not be used to increase the butter ration, which applies only to creamery butter.
