Ceisteanna—Questions. Oral Answers. - Courses of Instruction for Millers and Bakers.

asked the Minister for Industry and Commerce if he is prepared to avail of the services of the millers who successfully produced flour from 99 per cent. Irish wheat and of the Curragh bakers who successfully converted this flour into wholesome and palatable bread, for the purpose of giving courses of instruction to other millers and bakers, so that they may be properly trained to make full use of Irish wheat before the next harvest.

I assume that the Deputy's question refers to one of the controlled experiments which are being carried out under the auspices of the Institute for Industrial Research and Standards as a part of a general investigation. This investigation is designed to determine whether a palatable batch loaf of reasonable quality can be produced from flour made wholly from Irish wheat and, if so, whether any changes in milling and baking techniques would be required to enable such a loaf to be produced commercially.

When the institute have completed their investigations their authoritative findings and recommendations will be available to the milling and bakery industries. I am informed by the institute that the cereals laboratory established in the institute is prepared to give advice to millers and bakers.

Is the Minister aware that he has from now until next October in which to train the millers and bakers, who have got the fat of this thing up to now, to produce an all-Irish loaf? I think that should be time enough for them.

I am not so aware.
